Kohlrabi beans salad

Inspired by Ottolenghi and added my own twist to it. The beans make this salad super creamy ☺️


Ingredients serve 2 persons

1 medium sized kohlrabi

1 spring onion

Handful dill

Handful dried cassis

1 can borlotti beans (or any other beans)

1 garlic clove

1 tsp lemon zest

4 tbsp lemon juice

6 tbsp olive oil

Salt and pepper

Roasted sesame, pumpkin and/or sunflower seeds (or any other roasted seeds)

Cut kohlrabi very thinly (or use slicer) and then cut in stripes

Cut spring onion in slices

Chop dill

Add all ingredients into a bowl

Add dried cassis and washed beans

Season with crushed garlic, lemon zest, lemon juice, olive oil, salt and pepper

Serve with roasted seeds
