Germknödel

Stephen’s life time favorite dish 😋 It’s doughy, fluffy, hearty and just delicous! Served with vanilla sauce (find recipe here in goormey) and poppy seeds sugar dust 🤤

Ingredients

Ingredients serve 8 persons

130ml milk

42g fresh yeast

2 tbsp sugar

400g flour

1/2 tsp salt

50g soft butter

2 eggs

8 tsp plum jam (for Swiss people: go for Alnatura Pflaumenmus, do not use Pflaumenkonfi)

1 tbsp sugar

3 tbsp poppy seeds

1l vanilla sauce (find recipe in goormey)

Instructions

Gently heat milk to lukewarm, add yeast and 1 tbsp sugar and mix until the yeast is fully dissolved (mix should never boil, the yeast would die)

Add flour, 1 tbsp sugar, salt, butter and eggs to bowl and mix with a hand mixer

Add milk yeast mix little by little to bowl and keep mixing until smooth dough forms

Form the dough into a ball on a flour dusted surface and let the dough rise in the bowl covered with a kitchen towel at a warm place (ca. 1h) until the dough volume is doubled

Divide dough into 8 pieces, form discs, fill them with each 1 tsp plum jam and form round dumplings. Let them rest for 15min.

Steam dumplings for 12-15min

Grind sugar and poppy seeds in a mortar

Serve dumplings with vanilla sauce and poppy seeds sugar mix
