Tuscan green salsa (for lampredotto)

The traditional and iconic condiment for lampredotto is salsa verde (green sauce), a fresh, piquant, herb-based sauce that balances the rich flavor of the slow-cooked tripe.

Ingredients

Ingredients serve 6 persons

1 clove garlic

2-3 anchovies

1 large gherkin

1.5 teaspoon capers

1 egg (hard boiled)

1 cooked patato (optional, for creaminess)

A little lemon juice

Lots of olive oil

Salt & peppr
