Thai Larb Mu

I'm absolutely in love with this dish. Amazing combination of flavours and ingredients. It's a salad made from meat. Minced pork is seasoned with fish sauce, chili flakes, lime juice, toasted sticky rice and some beautiful herbs to round it off.


Ingredients serve 2 persons

5 tablespoons of uncooked Thai sticky rice

350g minced pork

4 chopped thai chillies (or more if you like)

1/2 tablespoon sugar (or more if you like)

1 tablespoon of fish sauce (or more if you like)

2 limes (juice)

3 shallots

A few leaves of culantro or cilantro

5 spring onions

20 leaves of mint

Take the uncooked sticky rice and fry it in a pan until gold-brown (ca. 10 - 15mins). Let it cool off. This will be used to give the dish an amazing crunch.

Take the toasted rice, put it in a mortar and turn it into powder. Put aside for later.

Add pork into pot and fry until it breaks into small pieces. Fully cook through. Then take off the heat.

Add around 1 large tablespoon of the rice powder to the pork.

Add the chilli flakes, sugar, and the fish sauce.

Squeeze limes into the mix.

Finally, mince according to preference your herbs and also add into the mix.

Mix well and enjoy!
